Milk-focused Single Origin

A balanced and smooth brown Brazilian coffee

Welcome to Brazil. The Fazenda Bananal is a large traditional family-owned farm with 8 hectares of specially planted Yellow Catuai. The farm is owned by a fourth-generation farmer Carolina Attala and her husband with the whole family contributing to the farming, harvesting and processing functions each season. What makes these Brazilian coffee beans special is the care and attention to detail the Attala’s take when drying the coffee cherries, ensuring they have enough time to dry slowly. This has produced a sweet caramel note and soft melon-like acidity. Buy this single-origin coffee if you crave for caramel, nuts and chocolate notes in your cup.

Espresso recipe we are using:

•  Ground coffee weight: 19.5g; 19g for Dark Roast
•  Beverage weight: 39-40g yield; 38-39g yield for Dark Roast
•  Brew Ratio : 1:2;
•  Brew (extraction) time: 27-28 seconds; 26-27 seconds for Dark Roast
•  Water temperature: 92°C
•  Resting Period: Rested (27-35 days from roasting date)

*Note: As each machine is different, start with an amount of coffee that comfortably fits in your basket. We are using VST 20gm baskets for our recipes. For example, if your portafilter fits 16g of coffee, you need to down dose it as per our recipe. Dose and distribute carefully using a scale capable of reading to an accuracy of 0,1g.

Hot tips:
Make sure the portafilter is hot when you start brewing. If it’s not, run some hot water through it to heat it up. The espresso shot should first come out as drips and be heavy and oily, and eventually become a steady stream. Please use your grind setting to achieve the recommended brew time.

COFFEE BY COLOUR

Colour can intuitively communicate
how coffee tastes.

At THREE we communicate how our coffees taste through colour. We have grouped all of the
coffees we offer into three different colour groups, based on their sensory characteristics. This
makes it easy for you to find coffees you like.
