This particular lot is the Geisha variety and has been processed as a regular Natural. It is part of the "Signature" series, the more premium line of Inmaculada's offerings.

During drying, cherries are placed in a thin layer in a shaded dry room. The material on which they sit is perforated, allowing air to flow over the cherries, which helps keep the cherries cool, reducing 'fermentation' as they dry. This results in a Natural that is both very sweet, and exhibits classic Geisha characteristics (which can be lost in classic natural processing). Expect notes of Florals, Citrus, Stone fruit and a deep sweetness.
