This coffee was grown by smallholder farmers around a village of Gerse (Ger-say) in the region of Yirgacheffe. The smallholder farms, with just a few hectares of land, that contribute to this lot are located between 1,500-2000masl, most of whom intercrop with other crops. These are used to feed their families as well as trade for alternative income streams. This lot was processed as a natural with a drying time of around 30 days.

Due to its elevation, this lot has a med-high natural acidity. During processing, it was subject to small amounts of fermentation, producing sweet, 'fruited' aromatics. This increases its perceived sweetness and balances the med-high level of acidity produced through elevation. A very small amount of 'ferment' is detectable in the cup as yellow fruit created by the aromatic esters produced during processing. However, it is 'clean', with terroir and varietal still dominating the cup. Expect yellow and orange fruits in the cup paired with a brown sugar-like sweetness.

COFFEE BY COLOUR

Colour can intuitively communicate
how coffee tastes.

At THREE we communicate how our coffees taste through colour. We have grouped all of the
coffees we offer into three different colour groups, based on their sensory characteristics. This
makes it easy for you to find coffees you like.
