Tano Batak
Tano Batak coffee comes from the Lintong and Dolok Sanggul regions near South Lake Toba in Sumatra and is grown by the indigenous Batak people. At 1,400 to 1,550 masl, this region has the highest coffee growing altitudes in North Sumatra. The Batak people have been involved in coffee production since the late 19th century when coffee was brought by the Dutch. This particular cooperative has well established relationships with the local farmers and takes pride in sourcing the finest coffees, while remaining committed to social and environmental sustainability. The cooperative wet hulls the coffee at 28-32% moisture and then dry it in green houses. Once around 11-12% moisture, they run the coffee over densametric tables before sending it for hand sorting.
