Cafe Granja la Esperanza are known for producing some of the best coffees in Colombia. This lot is from the Potosi farm and is processed as an anaerobic natural. Cherries are placed in tanks with a closed lid but not sealed, allowing some air flow. Cherries are left to ferment for 48hrs after which they are placed in mechanical dryers for 48hrs. They are then laid out in the sun to dry for a further 9 days. Expect a big fruit bomb sweetness with notes of tropical fruits and berries.
